These banana and apple muffins are super easy, healthy, fun and most importantly delicious. A brag worthy rating of 8.84
I love to bake a large batch ( I double up on the recipe below) and pop them in the freezer. If I know I’ve got a busy day ahead, I’ll take some out to defrost the night before or microwave them in the morning for a hot delicious breakfast.
YOU WILL NEED:
1 apple – diced
1 banana – mashed
1 teaspoon cinammon
1 teaspoon vanilla essence
1 table spoon sunflower oil (optional)
3 table spoons of self raising flour
3 tables spoons of oats
pinch of salt
1/2 teaspoon of baking powder
Pre- heat your oven to 170 degrees and grease a muffin tray – or line up 6 muffin cases on a tray.
Put the diced apple and a teaspoon of cinnamon in a microwaveable bowl – stir so that the apples are covered in the cinnamon and add a dash of water
Heat the cinnamon covered apples in the microwave for 1 to two minutes until soft-ish. Set aside to cool
Mash the banana in a large bowl
Add in the eggs and mix em up
Fold in the sifted flour, along with the oats, salt, baking powder and vanilla essence
Fold in the cooled (ish) apple chunks
Put a couple tablespoons of mix in each muffin case and put the tray in the oven for 10 to 15 minutes until the delicious muffins are golden brown and a toothpick comes out clean when poked in the middle of one.
I’m a firm believer in making healthy eating enjoyable. You don’t have to give up your favourite foods to eat well and Lord knows I did not sign up for a life of regret and taste bud abuse. With a few clever tweaks, you can carry on eating your favourite meals that will have you smiling all the way to the gym. (Can’t guarantee smiles on the way back from gym depending on sesh)
These high protein vanilla breakfast waffles will have you wondering why I haven’t won a Nobel peace prize. The glorious combination of ingredients while maintaining a light and fluffy texture is truly ground breaking.

Today I bring you the perfect lazy Sunday Brunch Recipe – Pumpkin Spice Pancakes!
I came up with this delicious recipe sometime during January, after Starbucks stopped their seasonal drinks and the withdrawal symptoms kicked in.
These things are super lean, naturally sweet and so filling! The recipe makes 15 pancakes if you put two tablespoons of mix per pancake. Simply whip up the ingredients and use flight light spray to save on the oil! Feel free to skip out on the flour – it simple keeps the texture light and fluffy which I personally prefer (I’m a firm believer that carbs are not the devil).

It’s no secret that I can often find myself running out of time in the mornings. Between gymming, praying, and slaying my face, I’m frequently left having to choose between a healthy breakfast a hearty instagram scroll.
Well, CHOOSE NO MORE, fellow late runners.
This 3 minute super quick breakfast will have you out the door in no time – and you can even take it with you! I absolutely adore this smooth creamy shake on days where I want something to grab and go.
YOU WILL NEED:
Coffee (1 to 3 teaspoons depending on your addiction level)
1 Tablespoon of baking cocoa powder (the real chocolatey stuff that tastes gross on its own)
Nescafe mocha sachet (optional for extra mocha-y-ness)
1 – 3 Table spoons of oats (optional for extra carbs)
Milk (Almond, goat, soy – whatever you want. I use lactose free)
1 scoop of chocolate protein powder
WHAT TO DO
Boil some water (a very small amount, like 1/5th of a cup. just enough to..) & dissolve the coffee and mocha sachet in the hot water
Add your chopped banana, a handful of icecubes, a cup of milk, the oats, cocoa powder and scoop of protein powder to the blender
Pour the silky coffee mocha blend into the blender
Whiz it up and you’re legit done! It really is that easy!
Ok and also add a cute straw for the gram
Super easy and so so delicious!
The banana gives it a natural sweetness while the low GI protein will keep you feeling full for longer.

So a while ago I (think) I invented the Beggel. And it has been my hands down favourite brunch ever since. The beggel is a moist, succulent, doughy french toast bagel with a runny yolk at the centre the’ts simply perfect for dipping. I eat mine smothered with cream cheese and fresh salmon and omg I want one right now so let’s get straight to this ok
YOU WILL NEED
Half or 1 bagel
Salt & pepper for seasoning
Extra light Philadelphia cream cheese (so much less fat than the usual kind!)
Rocket for garnishing ( just makes it look cute for the gram… could go without tbh)
Some Milk – about 5 table spoons
WHAT TO DO
Whisk one whole egg and one egg white, leave the second egg yolk in the shell…for now
add a splash of milk to the whisked eggs, along with a sprinkle of salt and pepper
Place your bagels in the mix and allow them to sit in it, saturating the souls in all the eggy goodness
Heat a frying pan with a few spritz of 1 cal spray on low heat
Add the Beggel to the pan and cook on each side for 1 minute, until slightly golden
Spritz a little spray in the middle of the beggel and add the second yoke to the middle.
Let your OCD feel incredibly satisfied at how perfectly the yolk fits inside
Heat until the yolk is at your preferred consistency, about 1 – 2 minutes for me. If you’d like to brown the yolk at the top I recommend showing it under a hot grill for a quick few
Spread the cream cheese, top with salmon, place on a bed of rocket, sprinkle some salt and pep and enjoy!
